  1. Thaw 48 hours in refrigerator (36-40ºF).
  2. Always leave in sealed bag during thawing.


  1. Pre-heat oven: 350ºF for conventional; 325ºF for convection.
  2. Remove plastic bag; do not remove netting.
  3. Place product on tray and cover with foil.
  4. Cook product until it reaches an internal temperature of 160º:
    • CONVENTIONAL OVEN: 35 minutes/lb. if frozen; 28 minutes/lb. if thawed.
    • CONVECTION OVEN: 28 minutes/lb. if frozen; 23 minutes/lb. if thawed.
  5. Remove from oven and let rest for 10 minutes at temperature; temperature should reach 165ºF.
  6. Remove netting prior to serving.
